
Cottage Cheese Pancakes
Simple and creamy pancakes that contain more protein than ordinary pancakes. These pair well with fruits such as banana, blueberries, or strawberries.
Ingredients
- 3/4 Cup flour
- 1/2 TSP baking soda
- 1/4 TSP salt
- 2 eggs
- 3/4 Cup low-fat cottage cheese
- 1/2 Cup nonfat milk
Instructions
- In a large bowl, whisk all ingredients together
- Lightly coat a skillet or griddle with cooking spray
- Place about 2 tablespoons of batter into the skillet
- Cook the pancakes over medium heat for 2-3 minutes on each side or until golden brown and cooked in the center
