Chicken and Vegetables

  • 2 Medium Chicken Breast Chopped
  • 1 Cup Bell Pepper Chopped and any color you prefer
  • 1/2 Onion Chopped
  • 1 Cup Broccoli Florets
  • 1/2 Cup Grape Tomoates Halved
  • 2 TBSP olive oil
  • 1 TSP Italian Seasoning
  • Salt and Pepper to Taste


  • Preheat oven to 500 degrees
  • Chop all veggies into large pieces and cube the chicken breasts
  • Place the chicken and veggies in a medium roasting dish or sheet pan. Add the olive oil, salt and pepper, Italian seasoning, Toss to combine
  • Bake for 15 minutes or until the veggies are charred and chicken is cooked
