Preheat oven to 375 degrees
Line a large baking sheet with foil
Place eggplant slices in a single layer
Drizzle olive oil over each slice
Roast the eggplant slices for about 25 minutes, or until soft in the center
On each slice add 1TBSP marinara, then top with basil leaves and cheese. Sprinkle salt and pepper to taste
Bake eggplant for an additional 6 minutes or until cheese melts.
