Cottage Cheese Pancakes

Simple and creamy pancakes that contain more protein than ordinary pancakes. These pair well with fruits such as banana, blueberries, or strawberries.

  • 3/4 Cup flour
  • 1/2 TSP baking soda
  • 1/4 TSP salt
  • 2 eggs
  • 3/4 Cup low-fat cottage cheese
  • 1/2 Cup nonfat milk


  • In a large bowl, whisk all ingredients together
  • Lightly coat a skillet or griddle with cooking spray
  • Place about 2 tablespoons of batter into the skillet
  • Cook the pancakes over medium heat for 2-3 minutes on each side or until golden brown and cooked in the center
