Eggplant Pizza

  • 1 Medium Eggplant sliced 1/2"thick
  • 1 TBSP olive oil
  • 1 TSP Dried Basil or 10-12 fresh basil leaves
  • 4 TBSP Mozzarella grated
  • 3/4 Cup Store bought low sugar marinara
  • Salt and Pepper to Taste


  • Preheat oven to 375 degrees
  • Line a large baking sheet with foil
  • Place eggplant slices in a single layer
  • Drizzle olive oil over each slice
  • Roast the eggplant slices for about 25 minutes, or until soft in the center
  • On each slice add 1TBSP marinara, then top with basil leaves and cheese. Sprinkle salt and pepper to taste
  • Bake eggplant for an additional 6 minutes or until cheese melts.
